Aaron, you are probably on the money when you said Sterling Sharpe would have been in the Hall of Fame with a full career. Also You said he was the one player you would like to see play a game for the Packers. I was fortunate in that I was living in Wisconsin during his career and did get to see him play most all the home games at Lambeau Field.
My choice for a former Packer would be a very old timer I never saw play a game for the Packers, but watched on film where he seemed to dominate those trying to defend him. That would be Don Hutson. For me, I would like to see if he could compete against the modern day defenders and sophisticated defenses. Hutson had size for a wide receiver at 6'1" and ran like the wind. He ran the 100 yard dash in 9.7 seconds which would likely mean he would run a sub 4 second 40 yard dash. It would make my day to see him try to play successfully against a modern day team while wearing his Packers uniform.

I read, somewhere, that Simone Biles will perform a routine on the uneven goal posts whenever the Packers score a TD. Not to take anything away from the Lambeau Leap.
